👩‍🍳 How to make Mixed Vegetable Biryani

  1. Soak rice for 30 mins. Heat ghee at 160°C. Add 1/3 of sliced onions, fry until deep golden. Remove (reserve for layering).
  2. In remaining ghee, add cumin seeds (crackle 15 seconds), cinnamon, bay leaves, cloves, cardamom.
  3. Add remaining onions, sauté 3 mins. Add ginger, garlic, green chillies, cook 2 mins.
  4. Add vegetables, sauté 3 mins. Add yogurt, garam masala, salt. Cook 2 mins.
  5. Add rinsed rice, sauté 2 mins.
  6. Boil water, pour over rice. Bring to boil.
  7. Layer with fried onions, coriander, mint.
  8. Cover with foil, place lid. Dum cook on low heat (120°C) for 18-20 mins.
  9. Rice should be tender, fragrant.
