👩‍🍳 How to make Methi Kachodi

  1. Mix flour, salt, carom seeds. Rub in oil. Add water, knead into firm dough. Rest 20 mins.
  2. Blanch methi 2 mins, cool, squeeze water out, chop finely.
  3. Heat oil at 150°C. Add cumin seeds (crackle 15 seconds).
  4. Add green chillies, ginger, cook 30 seconds. Add onions, sauté 2 mins.
  5. Add methi, spice powders, salt. Sauté 2 mins. Add gram flour. Cool.
  6. Roll dough portions into thin circles. Place filling in center.
  7. Seal edges to form disc.
  8. Heat oil to 160°C. Deep fry 8-10 mins until golden.
