👩‍🍳 How to make Masala Dosa

  1. Grind urad dal to fine paste. Transfer to bowl.
  2. Grind rice with fenugreek to smooth paste. Mix with urad paste.
  3. Add salt. Cover and ferment 8 hours to overnight.
  4. Heat oil at 150°C. Add mustard seeds (crackle 15 seconds).
  5. Add urad dal, fry 30 seconds. Add curry leaves, cook 10 seconds.
  6. Add green chillies, ginger, cook 30 seconds. Add onions, sauté 2 mins.
  7. Add mashed potatoes, turmeric, red chilli powder, salt. Mix well. Cook 2 mins.
  8. Heat dosa tawa to 200°C. Pour ¼ cup batter, spread thinly in circular motion.
  9. Fry 2 mins until bottom is golden. Spread 2 tbsp potato masala in center.
  10. Add oil around edges. Fold into half or roll. Fry 1 min more.
  11. Remove to plate.
