👩🍳 How to make Masala Dosa
- Grind urad dal to fine paste. Transfer to bowl.
- Grind rice with fenugreek to smooth paste. Mix with urad paste.
- Add salt. Cover and ferment 8 hours to overnight.
- Heat oil at 150°C. Add mustard seeds (crackle 15 seconds).
- Add urad dal, fry 30 seconds. Add curry leaves, cook 10 seconds.
- Add green chillies, ginger, cook 30 seconds. Add onions, sauté 2 mins.
- Add mashed potatoes, turmeric, red chilli powder, salt. Mix well. Cook 2 mins.
- Heat dosa tawa to 200°C. Pour ¼ cup batter, spread thinly in circular motion.
- Fry 2 mins until bottom is golden. Spread 2 tbsp potato masala in center.
- Add oil around edges. Fold into half or roll. Fry 1 min more.
- Remove to plate.
