👩🍳 How to make Light Vegetable Khichdi
- Rinse rice and dal. Heat ghee at 150°C. Add cumin seeds (crackle 15 seconds).
- Add bay leaf, onions, sauté 2 mins. Add ginger, green chillies, cook 1 min.
- Add vegetables, sauté 2 mins. Add rice, dal, sauté 2 mins.
- Add turmeric, salt, water. Bring to boil.
- Cover, cook on low heat (120°C) for 15-18 mins.
- Rice and dal should be soft, vegetables tender.
- Garnish with coriander.
