👩‍🍳 How to make Light Vegetable Khichdi

  1. Rinse rice and dal. Heat ghee at 150°C. Add cumin seeds (crackle 15 seconds).
  2. Add bay leaf, onions, sauté 2 mins. Add ginger, green chillies, cook 1 min.
  3. Add vegetables, sauté 2 mins. Add rice, dal, sauté 2 mins.
  4. Add turmeric, salt, water. Bring to boil.
  5. Cover, cook on low heat (120°C) for 15-18 mins.
  6. Rice and dal should be soft, vegetables tender.
  7. Garnish with coriander.
