  1. Rinse dal. Pressure cook with turmeric, salt, water for 2 whistles. Cook 8 mins, release steam.
  2. Mash slightly. Heat ghee at 140°C.
  3. Add cumin seeds (crackle 15 seconds), dried chillies, fry 20 seconds.
  4. Add asafoetida, ginger, garlic, cook 30 seconds.
  5. Add curry leaves, cook 10 seconds.
  6. Pour into dal. Stir well. Garnish with coriander.
