👩‍🍳 How to make Kheer

  1. Soak saffron in 2 tbsp warm milk for 5 mins.
  2. Heat ghee at 140°C. Add rinsed rice, fry 2 mins until light golden.
  3. Heat milk and condensed milk to 80°C in heavy-bottom pot.
  4. Add fried rice, stir constantly.
  5. Simmer 25-30 mins at low heat (110°C), stirring occasionally.
  6. Rice should be very soft, milk should reduce to creamy consistency (coats spoon).
  7. Add saffron with soaking water, cardamom, dry fruits, rose water.
  8. Cook 3 mins more.
  9. Serve warm or chilled.
