👩🍳 How to make Kheer
- Soak saffron in 2 tbsp warm milk for 5 mins.
- Heat ghee at 140°C. Add rinsed rice, fry 2 mins until light golden.
- Heat milk and condensed milk to 80°C in heavy-bottom pot.
- Add fried rice, stir constantly.
- Simmer 25-30 mins at low heat (110°C), stirring occasionally.
- Rice should be very soft, milk should reduce to creamy consistency (coats spoon).
- Add saffron with soaking water, cardamom, dry fruits, rose water.
- Cook 3 mins more.
- Serve warm or chilled.
