👩🍳 How to make Jalebi
- Mix flour, yogurt, salt, turmeric. Add baking soda, mix gently.
- Add water gradually to make thin batter (pouring consistency).
- Let rest 8 hours or overnight for fermentation.
- Batter should be slightly fizzy.
- Dissolve sugar in water. Bring to boil.
- Simmer 10 mins until 1-thread consistency.
- Add cardamom, saffron, lemon juice.
- Heat oil to 170°C.
- Pour batter into piping bag with round nozzle.
- Squeeze batter into spiral shapes directly into oil.
- Fry 30 seconds, flip, fry 30 seconds more until light golden.
- Remove with slotted spoon.
- Immediately dip hot jalebi into warm syrup (60°C).
- Soak 10-15 seconds, remove to plate.
- Drizzle remaining syrup on top.
