👩‍🍳 How to make Jalebi

  1. Mix flour, yogurt, salt, turmeric. Add baking soda, mix gently.
  2. Add water gradually to make thin batter (pouring consistency).
  3. Let rest 8 hours or overnight for fermentation.
  4. Batter should be slightly fizzy.
  5. Dissolve sugar in water. Bring to boil.
  6. Simmer 10 mins until 1-thread consistency.
  7. Add cardamom, saffron, lemon juice.
  8. Heat oil to 170°C.
  9. Pour batter into piping bag with round nozzle.
  10. Squeeze batter into spiral shapes directly into oil.
  11. Fry 30 seconds, flip, fry 30 seconds more until light golden.
  12. Remove with slotted spoon.
  13. Immediately dip hot jalebi into warm syrup (60°C).
  14. Soak 10-15 seconds, remove to plate.
  15. Drizzle remaining syrup on top.
