👩🍳 How to make Gujhiya
- Mix flour, semolina, baking powder, salt. Rub in ghee.
- Add yogurt, water, knead into soft dough. Rest 15 mins.
- Crumble khoya. Mix with condensed milk, dry fruits, cardamom. Heat oil, lightly toast filling 2 mins.
- Divide dough into 8 portions. Roll into 3-inch rounds.
- Place 1.5 tbsp filling on one half. Fold in half, seal edges with fork.
- Heat oil to 170°C. Deep fry gujhiya 3-4 mins until light golden. Drain.
- Prepare syrup: dissolve sugar in water, bring to boil, add cardamom, saffron, simmer 5 mins.
- Soak warm gujhiya in warm sugar syrup for 5 mins.
