👩‍🍳 How to make Gujhiya

  1. Mix flour, semolina, baking powder, salt. Rub in ghee.
  2. Add yogurt, water, knead into soft dough. Rest 15 mins.
  3. Crumble khoya. Mix with condensed milk, dry fruits, cardamom. Heat oil, lightly toast filling 2 mins.
  4. Divide dough into 8 portions. Roll into 3-inch rounds.
  5. Place 1.5 tbsp filling on one half. Fold in half, seal edges with fork.
  6. Heat oil to 170°C. Deep fry gujhiya 3-4 mins until light golden. Drain.
  7. Prepare syrup: dissolve sugar in water, bring to boil, add cardamom, saffron, simmer 5 mins.
  8. Soak warm gujhiya in warm sugar syrup for 5 mins.
