👩🍳 How to make Fermented Rice Batter Idiappam
- Mix rice flour with salt. Add water gradually to make smooth, thick paste.
- Heat oil at 140°C. Add mustard seeds (crackle 15 seconds).
- Add curry leaves, green chillies, ginger. Pour into rice flour mixture, mix well.
- Fill idiappam maker (or put paste in piping bag with round nozzle).
- Grease steamer plate. Extrude batter in coils or loops onto plate.
- Steam for 6-8 mins at boiling water until cooked through.
- Serve hot with sambar or curried vegetables.
