👩‍🍳 How to make Fermented Rice Batter Idiappam

  1. Mix rice flour with salt. Add water gradually to make smooth, thick paste.
  2. Heat oil at 140°C. Add mustard seeds (crackle 15 seconds).
  3. Add curry leaves, green chillies, ginger. Pour into rice flour mixture, mix well.
  4. Fill idiappam maker (or put paste in piping bag with round nozzle).
  5. Grease steamer plate. Extrude batter in coils or loops onto plate.
  6. Steam for 6-8 mins at boiling water until cooked through.
  7. Serve hot with sambar or curried vegetables.
