👩🍳 How to make Dahi Bhindi
- Wipe okra dry. Heat oil at 160°C. Add okra, sauté 4 mins until slightly tender. Remove.
- In same oil, add cumin seeds (crackle 15 seconds).
- Add green chillies, ginger, cook 30 seconds. Add onions, sauté 2 mins.
- Add turmeric, red chilli, coriander powder, cook 1 min.
- Add yogurt, salt, water. Stir gently to combine.
- Add cooked okra back. Simmer 8 mins at low heat (120°C).
- Add garam masala. Garnish with coriander.
