👩‍🍳 How to make Dahi Bhindi

  1. Wipe okra dry. Heat oil at 160°C. Add okra, sauté 4 mins until slightly tender. Remove.
  2. In same oil, add cumin seeds (crackle 15 seconds).
  3. Add green chillies, ginger, cook 30 seconds. Add onions, sauté 2 mins.
  4. Add turmeric, red chilli, coriander powder, cook 1 min.
  5. Add yogurt, salt, water. Stir gently to combine.
  6. Add cooked okra back. Simmer 8 mins at low heat (120°C).
  7. Add garam masala. Garnish with coriander.
