- Heat oil at 150°C. Add onions, sauté 2 mins. Add ginger, cook 30 seconds.
- Add corn, carrots, sauté 2 mins.
- Add stock, salt. Bring to boil, simmer 10 mins.
- Blend 1/3 of soup for creaminess. Return to pot.
- Add cumin, pepper. Simmer 2 mins.
- Stir in cream. Garnish with coriander.
