  1. Heat oil at 160°C. Add mustard seeds (crackle 15 seconds).
  2. Add curry leaves, green chillies, ginger, cook 30 seconds.
  3. Add onions, sauté 2 mins. Add capsicum, corn, sauté 2 mins.
  4. Add turmeric, salt, water. Bring to simmer (90°C).
  5. Cook 3-4 mins until vegetables are tender and water is absorbed.
  6. Add lemon juice. Serve hot.
