👩‍🍳 How to make Baingan Bharta

  1. Roast whole eggplants over open flame or bake at 200°C for 12 mins until skin blackens and flesh is soft.
  2. Cool, peel off charred skin. Mash flesh thoroughly.
  3. Heat oil at 160°C. Add cumin seeds (crackle 15 seconds).
  4. Add green chillies, ginger, cook 30 seconds. Add onions, sauté 3 mins.
  5. Add tomatoes, cook 3 mins until soft.
  6. Add spice powders, cook 1 min.
  7. Add mashed eggplant, salt. Cook 5 mins at low heat.
  8. Mixture should be moist but not wet.
  9. Garnish with coriander.
