👩🍳 How to make Baingan Bharta
- Roast whole eggplants over open flame or bake at 200°C for 12 mins until skin blackens and flesh is soft.
- Cool, peel off charred skin. Mash flesh thoroughly.
- Heat oil at 160°C. Add cumin seeds (crackle 15 seconds).
- Add green chillies, ginger, cook 30 seconds. Add onions, sauté 3 mins.
- Add tomatoes, cook 3 mins until soft.
- Add spice powders, cook 1 min.
- Add mashed eggplant, salt. Cook 5 mins at low heat.
- Mixture should be moist but not wet.
- Garnish with coriander.
