👩🍳 How to make Xutuli Pitha
- Prepare dough (10 mins, no heat): Mix rice flour, salt, and warm water to a firm, smooth dough — it should not crack when pressed. Divide into golf ball-sized portions.
- Make filling (5 mins, no heat): Mix grated jaggery, fresh coconut, and sesame seeds together until well combined.
- Shape and steam (15 mins, high steam): Flatten each dough ball into a thin oval (3mm thick). Place a spoonful of filling in the centre. Fold the oval over and pinch the edges together firmly — the shape resembles a half-moon or boat. Pinch the edges into a decorative pattern (the "xutuli" zigzag). Place on banana leaf in a steamer. Steam for 15 minutes until firm and translucent at the edges.
