👩‍🍳 How to make Pork Breakfast Assam

  1. Brown pork (15 mins, high heat): Heat mustard oil in a heavy kadai. Add pork belly pieces — they will release their own fat as they sear. Brown on all sides until golden and slightly crisp (12–15 minutes). The fat should render significantly.
  2. Add aromatics and braise (25 mins, medium-low heat): Add onion, garlic, ginger, dried chillies, turmeric, and salt. Stir to coat pork. Cook 5 minutes until onions are soft. Add water and green chillies. Cover and simmer until pork is very tender and the gravy is thick and richly flavoured (20 minutes).
