👩🍳 How to make Pork Breakfast Assam
- Brown pork (15 mins, high heat): Heat mustard oil in a heavy kadai. Add pork belly pieces — they will release their own fat as they sear. Brown on all sides until golden and slightly crisp (12–15 minutes). The fat should render significantly.
- Add aromatics and braise (25 mins, medium-low heat): Add onion, garlic, ginger, dried chillies, turmeric, and salt. Stir to coat pork. Cook 5 minutes until onions are soft. Add water and green chillies. Cover and simmer until pork is very tender and the gravy is thick and richly flavoured (20 minutes).
