👩🍳 How to make Poita Bhat
- Ferment overnight (0 mins, no heat): Place leftover cooked rice in a clay pot or bowl. Pour 500ml water over the rice — it should be fully submerged. Cover loosely and leave at room temperature overnight (8–10 hours). By morning the water will appear slightly cloudy and smell pleasantly sour.
- Serve cold (5 mins, no heat): Drain excess water if needed — the rice should be softened but still hold shape. Transfer to a plate. Top with chopped onion, green chillies, and coriander. Drizzle with mustard oil and season with salt. Eat with your fingers, mashing it together as you go.
