👩‍🍳 How to make Poita Bhat

  1. Ferment overnight (0 mins, no heat): Place leftover cooked rice in a clay pot or bowl. Pour 500ml water over the rice — it should be fully submerged. Cover loosely and leave at room temperature overnight (8–10 hours). By morning the water will appear slightly cloudy and smell pleasantly sour.
  2. Serve cold (5 mins, no heat): Drain excess water if needed — the rice should be softened but still hold shape. Transfer to a plate. Top with chopped onion, green chillies, and coriander. Drizzle with mustard oil and season with salt. Eat with your fingers, mashing it together as you go.
