👩🍳 How to make Peanut Ladoo
- Roast peanuts (8 mins, medium heat): Dry-roast peanuts in a heavy pan, stirring constantly until the skins blister and pop and the nuts smell roasted (8 minutes). Cool slightly, then rub between palms to remove skins. Coarsely crush peanuts — leave some chunks.
- Make syrup and bind (7 mins, medium heat): Melt jaggery with water, bring to soft-ball stage. Add crushed peanuts and cardamom. Mix quickly. Grease hands with ghee and shape into firm round balls while still warm.
