  1. Fry fish (8 mins, high heat): Rub fish with turmeric and salt. Fry in smoking hot mustard oil until golden and crisp on both sides. Remove.
  2. Make sour broth (17 mins, medium heat): In the same pan, add ginger and chillies. Cook 1 minute. Add ou tenga slices — they will release a naturally fruity, intense sourness. Add 400ml water. Boil 5 minutes. Return fish and simmer 10 minutes. The broth should be fruity-sour and pale golden.
