  1. Boil lentils (15 mins, high heat): Boil korai dal in plenty of water with a pinch of salt until completely soft — the lentils should be mashable between fingers (15 minutes). Drain thoroughly.
  2. Mash and season (5 mins, no heat): Coarsely mash the boiled lentils — leave some texture. Fold in chopped onion, green chillies, coriander, salt, and mustard oil. Mix vigorously. The pungent mustard oil should perfume the entire dish. Serve alongside poita bhat.
