  1. Brown chicken (10 mins, high heat): Heat mustard oil in a heavy-bottomed pan until smoking. Add chicken pieces skin-side down — they should sizzle loudly. Brown on all sides until golden (8–10 minutes). Remove and set aside.
  2. Build base (8 mins, medium heat): In the same pan, add onion and cook until softened and translucent (5 minutes). Add ginger, garlic, and chillies — cook 2 minutes until fragrant.
  3. Add khar and simmer (20 mins, medium-low heat): Return chicken to pan. Pour in khar water and 200ml plain water. Add turmeric and salt. Simmer uncovered until chicken is cooked through and sauce has reduced by half — the broth will be golden and slightly viscous (20 minutes).
