👩‍🍳 How to make Karimganj Breakfast

  1. Chingri macher jhol (20 mins, medium heat): Fry prawns in mustard oil with turmeric. Add onion, tomato, ginger, green chilli, cumin. Add water, simmer 12 minutes to a light golden curry.
  2. Begun bhaja: Slice brinjal 1cm thick. Rub with turmeric and salt. Shallow-fry in mustard oil until golden on both sides.

📖 Cultural notes

Karimganj borders Bangladesh and has perhaps the strongest Bengali cultural identity of any Assam district — its breakfast of prawn curry and fried brinjal with rice is virtually indistinguishable from the food of the greater Sylhet division across the border. ---
