  1. Make scrambled duck eggs (10 mins, medium heat): Heat mustard oil in a pan until it begins to smoke slightly. Add onion and chilli — sauté 2 minutes until softened. Beat duck eggs with turmeric and salt. Pour into pan. Stir continuously with a wooden spoon, folding the curds over as they set — cook to a creamy, just-set scramble (avoid dry, rubbery eggs). Finish with fresh coriander.
