  1. Make bora batter (5 mins, no heat): Drain soaked urad dal. Grind to a fluffy, thick batter (add minimal water). Mix in ginger, green chilli, and salt. Whip vigorously to incorporate air — drop a small ball in water; it should float.
  2. Fry boras (15 mins, medium heat): Heat oil to 170°C. Drop tablespoon-sized balls of batter. Fry 4 minutes, turning, until golden-brown. Drain on paper. Soak fried boras in cold water for 2 minutes, then squeeze gently.
  3. Assemble (5 mins, no heat): Whisk curd smooth. Fold in jaggery. Place squeezed boras in curd. Dust with cumin powder and red chilli.
