👩🍳 How to make Dhekia Xaak with Eggs
- Blanch ferns (3 mins, high heat): Blanch dhekia in boiling salted water 3 minutes. Drain well.
- Stir-fry with eggs (12 mins, medium-high heat): Heat mustard oil until smoking. Add garlic and dried chillies — cook 1 minute. Add ferns and turmeric, stir-fry 5 minutes. Push to the side of the pan. Crack eggs directly into the pan. Scramble roughly, then fold into the ferns. Season with salt.
