  1. Make shorshe ilish (20 mins, medium heat): Marinate hilsa in mustard paste, green chilli, turmeric, salt. Cook in mustard oil in a covered pan on low heat for 15 minutes — the mustard steam-cooks the fish without drying it out.
  2. Aloo bhaji: Thinly sliced potato stir-fried with turmeric and mustard seeds in mustard oil (10 minutes).
  3. Serve: Rice with mustard hilsa and potato bhaji.
