👩🍳 How to make Cachar Breakfast
- Make shorshe ilish (20 mins, medium heat): Marinate hilsa in mustard paste, green chilli, turmeric, salt. Cook in mustard oil in a covered pan on low heat for 15 minutes — the mustard steam-cooks the fish without drying it out.
- Aloo bhaji: Thinly sliced potato stir-fried with turmeric and mustard seeds in mustard oil (10 minutes).
- Serve: Rice with mustard hilsa and potato bhaji.
📖 Cultural notes
Cachar district in the Barak Valley has a strongly Bengali-influenced food culture — shorshe ilish (hilsa in mustard) is the defining preparation of this region, bringing the Bengali love of hilsa into an Assamese context. ---
