- Make dough (10 mins, no heat): Mix rice flour, salt, and water to a soft, pliable dough. Divide into portions.
- Prepare filling (5 mins, no heat): Combine jaggery, coconut, and sesame seeds.
- Wrap and steam (20 mins, high steam): Roll each dough portion into a thin round. Add filling to centre, fold and wrap tightly in a soft banana leaf, securing with a toothpick. Place in a steamer basket. Steam over vigorously boiling water for 20 minutes — the banana leaf will soften and impart a faint herbal fragrance. Unwrap to serve.
