  1. Rinse khorisa (5 mins, no heat): Rinse fermented bamboo shoots under cold water twice to reduce sharpness. Squeeze out excess liquid.
  2. Stir-fry (15 mins, medium heat): Heat mustard oil until fragrant. Add onion, ginger, and chillies — cook 4 minutes until softened. Add khorisa and turmeric — stir-fry 8 minutes until the bamboo is heated through and any remaining moisture evaporates. Season with salt and coriander.
