👩🍳 How to make Aloo Pitika
- Boil potatoes (15 mins, high heat): Boil potatoes whole in salted water until a fork passes through without resistance (15 minutes). Peel while still hot — the skin will slip off easily.
- Mash and season (5 mins, no heat): Mash peeled potatoes coarsely with the back of a hand or flat spoon — they should be lumpy, not smooth. Add chopped onion, green chillies, coriander, salt, and mustard oil. Mix with your hand, pressing the onion into the mash. Serve with poita bhat or plain rice.
