  1. Heat oil, add mustard + curry leaves.
  2. Add tomatoes, cook 5 mins until soft.
  3. Add chilies, garlic, tamarind, salt, jaggery.
  4. Cook 10 mins until thick paste.
  5. Stir often.
  6. Should coat back of spoon.
