👩‍🍳 How to make Hyderabadi Biryani

  1. Marinate mutton in yogurt + paste + spices 2 hrs.
  2. Boil water + salt + rice + whole spices.
  3. Cook 70% done, drain.
  4. In heavy biryani pot, layer: mutton + 1 cup fried onions + fresh onion + herbs.
  5. Layer rice on top.
  6. Sprinkle remaining onions + herbs.
  7. Seal with foil.
  8. Cook on high 1 min, then low 18 mins.
  9. "Dum pukht" sealed cooking releases fragrance.
