- Cut pomfret into 5cm steaks.
- Heat oil (180°C), temper mustard, fenugreek (20 sec).
- Fry onions golden (8 min, deep amber).
- Add garlic-ginger (sharp 2 min).
- Turmeric, chilli, coriander, curry leaves (aroma intensifies 1 min).
- Add fish steaks, fry gently (3-4 min, exterior sealed, interior soft).
- Pour coconut milk, bring simmer (85°C, steam visible).
- Reduce low (120°C), cook 15-18 min undisturbed (fish opaque, flakes easily).
- Lemon juice, cilantro (last moment).
- Serve hot on steamed rice with dal and vegetable side.
