  1. Cut pomfret into 5cm steaks.
  2. Heat oil (180°C), temper mustard, fenugreek (20 sec).
  3. Fry onions golden (8 min, deep amber).
  4. Add garlic-ginger (sharp 2 min).
  5. Turmeric, chilli, coriander, curry leaves (aroma intensifies 1 min).
  6. Add fish steaks, fry gently (3-4 min, exterior sealed, interior soft).
  7. Pour coconut milk, bring simmer (85°C, steam visible).
  8. Reduce low (120°C), cook 15-18 min undisturbed (fish opaque, flakes easily).
  9. Lemon juice, cilantro (last moment).
  10. Serve hot on steamed rice with dal and vegetable side.
