  1. Boil water salt, add tapioca pearls, simmer low (120°C) 20-25 min until translucent (tender, no opaque center).
  2. Bring coconut milk simmer (85°C), add cooked tapioca with water, stir gently.
  3. Add jaggery, crushed cardamom, stir until dissolved (1-2 min).
  4. Cook low 3-5 min (flavors infuse).
  5. Toast raisin, cashew ghee (raisin puff 30 sec, cashew golden 1 min), add to pudding.
  6. Remove heat.
  7. Transfer bowls.
  8. Serve warm comforting coconut tapioca.
