👩🍳 How to make Steamed Fish Cakes with Turmeric
- Finely mince pomfret (remove all bones, food mill if available, smooth paste).
- Bowl: fish paste + eggs, mix vigorously fork 2 min (light, fluffy, pale).
- Add onions, garlic, ginger, turmeric, chilli, curry leaves, green chillies, cilantro, flour, salt.
- Mix spatula gently until just combined (light, airy texture).
- Divide 8 equal portions, shape round cakes (3cm height, 6cm diameter).
- Oil steamer tin cups generously.
- Place fish cakes gently.
- Fill steamer pot 500ml water, bring rolling boil (100°C, visible steam).
- Steamer tray on top, cover.
- Steam 12-15 min until set, springy touch (toothpick clean, springs back when pressed lightly).
- Cool 3 min in steamer.
- Remove carefully using knife edge.
- Serve hot with lime pickle or cilantro chutney.
