👩‍🍳 How to make Steamed Fish Cakes with Turmeric

  1. Finely mince pomfret (remove all bones, food mill if available, smooth paste).
  2. Bowl: fish paste + eggs, mix vigorously fork 2 min (light, fluffy, pale).
  3. Add onions, garlic, ginger, turmeric, chilli, curry leaves, green chillies, cilantro, flour, salt.
  4. Mix spatula gently until just combined (light, airy texture).
  5. Divide 8 equal portions, shape round cakes (3cm height, 6cm diameter).
  6. Oil steamer tin cups generously.
  7. Place fish cakes gently.
  8. Fill steamer pot 500ml water, bring rolling boil (100°C, visible steam).
  9. Steamer tray on top, cover.
  10. Steam 12-15 min until set, springy touch (toothpick clean, springs back when pressed lightly).
  11. Cool 3 min in steamer.
  12. Remove carefully using knife edge.
  13. Serve hot with lime pickle or cilantro chutney.
