  1. Clean squid: remove ink sac carefully, peel outer purple layer, rinse thoroughly.
  2. Cut into rings (0.5 cm) or chunks (2cm).
  3. Marinate: turmeric, chilli, ginger, garlic, lemon, salt, curry leaves (15 min, absorbs flavors).
  4. Heat oil deep pan high (200°C, test: wooden stick bubbles immediately).
  5. Batch fry squid (3-4 batches, avoid crowding) 2-3 min until golden crispy (color: light amber, texture: chewy-tender, no rubbery).
  6. Remove paper towel drain.
  7. Serve hot with tamarind chutney and lime wedges.
  8. Garnish cilantro.
