  1. Devein prawns, wash, pat dry.
  2. Toast grated coconut (3 min, light brown), grind with 80ml water (smooth paste).
  3. Heat oil (180°C), mustard crackling (15 sec), curry leaves (aroma 10 sec).
  4. Onions golden (6-7 min, deep amber).
  5. Garlic-ginger (1 min, fragrant).
  6. Turmeric, chilli, coriander (aroma intensifies 1 min).
  7. Add coconut paste, stir (1 min).
  8. Add prawns, fry (2 min, begin pink).
  9. Pour coconut milk, simmer low (120°C) 10-12 min (prawns opaque, fully pink).
  10. Lemon, cilantro (last).
  11. Serve hot rice.
