  1. Peel plantain, slice thin (2mm) using mandoline (uniform crisps).
  2. Soak cold water 15 min (removes starch, prevents browning).
  3. Pat dry thoroughly cloth (moisture removed).
  4. Heat oil high (200°C, test: wooden stick bubbles fast).
  5. Batch fry plantain slices 2-3 min until golden-brown crispy (light amber).
  6. Paper towel drain hot.
  7. Sprinkle salt, chilli (optional) while hot.
  8. Serve immediately crispy.
  9. Store airtight container.
