👩‍🍳 How to make Pineapple Custard Tart

  1. Crust: mix flour, salt, cut butter in (breadcrumb texture), add egg, water, knead into dough (pliable).
  2. Rest 15 min.
  3. Roll thin, line tart pan (blind bake 180°C 10 min until pale).
  4. Custard: heat milk 85°C, beat yolks jaggery until pale.
  5. Mix cornstarch with 2 tbsp milk (slurry).
  6. Slowly add hot milk to yolks while whisking (prevent curdle), return pot, cook very low stirring constantly 5-6 min (thickens).
  7. Add vanilla, ghee.
  8. Pour into crust.
  9. Top pineapple cubes.
  10. Cool completely.
  11. Serve chilled tropical fresh.
