👩🍳 How to make Pineapple Custard Tart
- Crust: mix flour, salt, cut butter in (breadcrumb texture), add egg, water, knead into dough (pliable).
- Rest 15 min.
- Roll thin, line tart pan (blind bake 180°C 10 min until pale).
- Custard: heat milk 85°C, beat yolks jaggery until pale.
- Mix cornstarch with 2 tbsp milk (slurry).
- Slowly add hot milk to yolks while whisking (prevent curdle), return pot, cook very low stirring constantly 5-6 min (thickens).
- Add vanilla, ghee.
- Pour into crust.
- Top pineapple cubes.
- Cool completely.
- Serve chilled tropical fresh.
