👩‍🍳 How to make Nicobari Chicken with Coconut

  1. Roast grated coconut dry pan (3-4 min, light brown, aroma nutty).
  2. Grind roasted coconut with water into paste (smooth, light cream).
  3. Heat oil medium (170°C), onions soften translucent (4 min, pale).
  4. Garlic-ginger (fragrant 1 min).
  5. Add chicken pieces, brown lightly (3-4 min, sealed 60% cooked).
  6. Turmeric, chilli, curry leaves, stir (30 sec).
  7. Add coconut paste, coconut milk, water, salt.
  8. Simmer low (120°C) covered 25-30 min (chicken fully cooked, tender, internal 75°C).
  9. Cilantro last (30 sec).
  10. Serve hot with rice and dal sides.
