👩🍳 How to make Nicobari Chicken with Coconut
- Roast grated coconut dry pan (3-4 min, light brown, aroma nutty).
- Grind roasted coconut with water into paste (smooth, light cream).
- Heat oil medium (170°C), onions soften translucent (4 min, pale).
- Garlic-ginger (fragrant 1 min).
- Add chicken pieces, brown lightly (3-4 min, sealed 60% cooked).
- Turmeric, chilli, curry leaves, stir (30 sec).
- Add coconut paste, coconut milk, water, salt.
- Simmer low (120°C) covered 25-30 min (chicken fully cooked, tender, internal 75°C).
- Cilantro last (30 sec).
- Serve hot with rice and dal sides.
