  1. Peel ripe mangoes, extract pulp (remove all fiber), mash through sieve (smooth).
  2. Mix cornstarch, water (smooth paste, no grit).
  3. Bring coconut milk simmer (85°C), add cornstarch slurry while stirring (prevents lumps), stir 2-3 min (thickens).
  4. Add mango pulp, jaggery, crushed cardamom, stir gently (1-2 min, flavor infuses, consistency creamy).
  5. Remove heat.
  6. Drizzle ghee.
  7. Transfer bowls immediately.
  8. Serve warm or chilled tropical aroma.
