  1. Bloom gelatin: sprinkle on cold water, let sit 5 min (soft spongy).
  2. Heat water gently (65°C), add bloomed gelatin, stir until dissolved (smooth), cool to room temp (22°C).
  3. Whip heavy cream until soft peaks (2 min, fluffy light).
  4. Fold mango pulp, jaggery, lemon juice into whipped cream (gentle 3-4 folds).
  5. Fold cooled gelatin solution gently (do not deflate).
  6. Transfer glasses/bowls.
  7. Refrigerate 2-3 hours until set (mousse light fluffy firm).
  8. Garnish mint.
  9. Serve chilled tropical light.
