👩‍🍳 How to make Island Samosa Fish Filling

  1. Dough: mix flour, salt, 2.5 tbsp oil, water until pliable (knead 5 min).
  2. Rest 20 min.
  3. Filling: mix fish, potato, onion, ginger, chilli, cumin, cilantro, lemon.
  4. Divide dough 10 balls.
  5. Roll thin (8cm), cut half-circle.
  6. Fill 1.5 tbsp filling half, fold triangle, seal edges (dampened water helps).
  7. Heat oil high (200°C).
  8. Fry samosa 3-4 min until golden crispy (light amber, sound hollow).
  9. Paper towel drain.
  10. Serve hot tamarind chutney.
