👩🍳 How to make Island Samosa Fish Filling
- Dough: mix flour, salt, 2.5 tbsp oil, water until pliable (knead 5 min).
- Rest 20 min.
- Filling: mix fish, potato, onion, ginger, chilli, cumin, cilantro, lemon.
- Divide dough 10 balls.
- Roll thin (8cm), cut half-circle.
- Fill 1.5 tbsp filling half, fold triangle, seal edges (dampened water helps).
- Heat oil high (200°C).
- Fry samosa 3-4 min until golden crispy (light amber, sound hollow).
- Paper towel drain.
- Serve hot tamarind chutney.
