- Heat oil (175°C), onions caramelized (10 min, deep).
- Garlic-ginger (2 min, warm).
- Meat pieces, brown (4-5 min, sealed, 60%).
- Spices: turmeric, chilli, coriander, cumin, curry (stir 1 min, coating).
- Add rice, toss (1 min, coated spice).
- Pour coconut milk, water, bring simmer (85°C steam).
- Reduce low (120°C), cover, cook 30-35 min undisturbed (meat tender, rice absorbs, dense thick curry develops).
- Cilantro (last).
- Serve hot, complete meal in bowl.
