  1. Heat oil (175°C), onions caramelized (10 min, deep).
  2. Garlic-ginger (2 min, warm).
  3. Meat pieces, brown (4-5 min, sealed, 60%).
  4. Spices: turmeric, chilli, coriander, cumin, curry (stir 1 min, coating).
  5. Add rice, toss (1 min, coated spice).
  6. Pour coconut milk, water, bring simmer (85°C steam).
  7. Reduce low (120°C), cover, cook 30-35 min undisturbed (meat tender, rice absorbs, dense thick curry develops).
  8. Cilantro (last).
  9. Serve hot, complete meal in bowl.
