👩🍳 How to make Fish Biryani Andaman
- Marinate fish: yogurt, ginger-garlic, turmeric, chilli, lemon, salt (30 min).
- Soak rice (20 min).
- Caramelize onions half ghee (10 min, deep amber), remove half.
- Cook rice boiling salted water 8 min (60% cooked), drain.
- Heat remaining ghee (180°C), fry marinated fish (3-4 min, sealed).
- Layer pot: fish, reserved onions, rice, fried onions top.
- Add spices: cinnamon, bay, cardamom, cloves between layers.
- Boil water 150ml, pour edges.
- Cover foil+lid, cook 180°C oven 20-25 min (rice fully cooked, fish steamed).
- Rest 5 min.
- Fork-fluff, cilantro-mint garnish.
- Serve hot.
