👩‍🍳 How to make Fish Biryani Andaman

  1. Marinate fish: yogurt, ginger-garlic, turmeric, chilli, lemon, salt (30 min).
  2. Soak rice (20 min).
  3. Caramelize onions half ghee (10 min, deep amber), remove half.
  4. Cook rice boiling salted water 8 min (60% cooked), drain.
  5. Heat remaining ghee (180°C), fry marinated fish (3-4 min, sealed).
  6. Layer pot: fish, reserved onions, rice, fried onions top.
  7. Add spices: cinnamon, bay, cardamom, cloves between layers.
  8. Boil water 150ml, pour edges.
  9. Cover foil+lid, cook 180°C oven 20-25 min (rice fully cooked, fish steamed).
  10. Rest 5 min.
  11. Fork-fluff, cilantro-mint garnish.
  12. Serve hot.
