  1. Mix cornstarch, water until smooth (no lumps).
  2. Bring coconut milk simmer (85°C, small bubbles).
  3. Sprinkle cornstarch slurry while stirring constantly (prevents lumps), stir 2-3 min as thickens (thick pourable, coats spoon).
  4. Add jaggery, crushed cardamom, stir until jaggery dissolves (1-2 min).
  5. Remove heat.
  6. Toast cashew, raisin ghee (cashew golden 1 min, raisin puff 30 sec), add to pudding.
  7. Transfer bowls immediately (pudding thickens as cools).
  8. Garnish grated coconut.
  9. Serve warm or chilled.
