  1. Soak toor dal 30 min, rinse.
  2. Pressure cook: dal, water, salt 3 whistles (15 min).
  3. Release, dal half-cooked soft.
  4. Heat oil medium (170°C), mustard crackling (15 sec), curry leaves (aroma).
  5. Onions soften (3-4 min), tomato crushed (1 min), garlic-ginger (1 min).
  6. Add dal with water, bring simmer (85°C).
  7. Add turmeric, chilli, cumin (stir 1 min).
  8. Add fish cubes, cook low (120°C) 12-15 min (fish opaque, dal creamy).
  9. Add coconut milk (last 2 min, don't boil).
  10. Cilantro (last 30 sec).
  11. Serve hot rice.
