👩‍🍳 How to make Coconut Barfi Island

  1. Heat 2 tbsp ghee pan low-medium (150°C), add grated coconut, stir constantly 6-8 min (toasts, moisture evaporates, darkens slightly).
  2. Add jaggery, stir continuously 4-5 min (jaggery melts, caramelizes, mixture becomes sticky).
  3. Add condensed milk, cardamom, stir vigorously 2-3 min (becomes fudgy, pulls from pan).
  4. Cool 5 min slightly.
  5. Grease square pan (0.5 tbsp ghee).
  6. Press coconut mixture into pan firmly (1cm thickness), smooth top.
  7. Cool completely.
  8. Cut into 12 pieces.
  9. Serve island fudgy sweet.
