👩🍳 How to make Coconut Barfi Island
- Heat 2 tbsp ghee pan low-medium (150°C), add grated coconut, stir constantly 6-8 min (toasts, moisture evaporates, darkens slightly).
- Add jaggery, stir continuously 4-5 min (jaggery melts, caramelizes, mixture becomes sticky).
- Add condensed milk, cardamom, stir vigorously 2-3 min (becomes fudgy, pulls from pan).
- Cool 5 min slightly.
- Grease square pan (0.5 tbsp ghee).
- Press coconut mixture into pan firmly (1cm thickness), smooth top.
- Cool completely.
- Cut into 12 pieces.
- Serve island fudgy sweet.
