- Boil cassava salted water until tender (15-20 min, soft).
- Drain, cool, mash into paste.
- Mix onions, green chillies, ginger, turmeric, curry leaves, salt, cilantro.
- Divide into 12 portions, shape into rounds (5cm diameter, 2cm height).
- Heat oil high (190°C).
- Batch fry cassava cakes 2-3 min per side (golden-brown crispy, hollow sound).
- Paper towel drain.
