  1. Boil cassava salted water until tender (15-20 min, soft).
  2. Drain, cool, mash into paste.
  3. Mix onions, green chillies, ginger, turmeric, curry leaves, salt, cilantro.
  4. Divide into 12 portions, shape into rounds (5cm diameter, 2cm height).
  5. Heat oil high (190°C).
  6. Batch fry cassava cakes 2-3 min per side (golden-brown crispy, hollow sound).
  7. Paper towel drain.
  8. Serve hot tamarind chutney.
