- Heat milk simmer (85°C, small bubbles visible).
- Beat egg yolks jaggery until pale (2 min, ribbon-like falls from spoon).
- Mix cornstarch with 2 tbsp milk (smooth slurry).
- Add mashed banana to milk, stir gently (banana incorporates).
- Slowly add hot milk mixture to egg yolks while whisking constantly (prevents curdling), add in thin stream.
- Return to pot, heat very low (120°C), stir constantly 5-6 min (custard thickens, coats back spoon).
- Add crushed cardamom, vanilla.
- Remove heat.
- Fold ghee gently.
- Transfer bowls.
- Garnish pistachios.
- Serve warm or chilled.
