👩‍🍳 How to make Banana Pudding Custard

  1. Heat milk simmer (85°C, small bubbles visible).
  2. Beat egg yolks jaggery until pale (2 min, ribbon-like falls from spoon).
  3. Mix cornstarch with 2 tbsp milk (smooth slurry).
  4. Add mashed banana to milk, stir gently (banana incorporates).
  5. Slowly add hot milk mixture to egg yolks while whisking constantly (prevents curdling), add in thin stream.
  6. Return to pot, heat very low (120°C), stir constantly 5-6 min (custard thickens, coats back spoon).
  7. Add crushed cardamom, vanilla.
  8. Remove heat.
  9. Fold ghee gently.
  10. Transfer bowls.
  11. Garnish pistachios.
  12. Serve warm or chilled.
