  1. Peel ripe banana, mash fork thoroughly (smooth paste, pale yellow, no lumps).
  2. Beat eggs separate bowl with milk, honey, vanilla until combined (pale gold).
  3. Mix flours, baking powder, salt, cinnamon, nutmeg dry bowl, whisk gently aerate (30% air).
  4. Fold mashed banana egg-milk gently (no overmix, retain airy).
