👩‍🍳 How to make Andaman Fried Rice with Shrimp

  1. Devein shrimp (remove dark intestinal thread), wash thoroughly cold water 2-3 times, pat dry.
  2. Pat rice cloth 5 min (moisture removed, prevents clumping).
  3. Marinate shrimp: turmeric, salt, lemon, ginger 10 min (turns pale pink).
  4. Heat 2 tbsp oil wok high heat (200°C, hand above = intense heat 2 sec).
  5. Marinated shrimp stir-fry 2 min each side until pink, opaque (no translucent center).
  6. Remove plate.
  7. Remaining 1 tbsp oil wok high (200°C).
  8. Onions stir-fry 1-2 min (translucent edges).
  9. Garlic-ginger 30 sec (sharp pungent aroma).
  10. Bell pepper, carrot stir-fry 1 min (edges soften, still crisp).
  11. Add rice, break clumps spatula (2-3 min, grains coat with oil, separate).
  12. Soy sauce, chilli, curry leaves, stir (1-2 min).
  13. Return shrimp, mix gently (30 sec heat through).
  14. Adjust salt, cilantro fold in end.
  15. Transfer plate immediately.
